Pancakes with Raspberries & Passionfruit

Ingredients

Serves 1

  • 1 small banana, peeled
  • 1 small egg
  • 2 egg whites
  • 25g protein powder, vanilla or unflavoured
  • 20g ground flaxseed
  • ¼ tsp baking powder
  • 1½ tsp coconut oil
  • 60g yoghurt, such as greek, natural or soya
  • 60g raspberries
  • 1 passionfruit

Method

Place the banana, egg, egg whites, protein powder, flaxseed and baking powder in a blender and blitz until smooth.

Heat the coconut oil in a large, non-stick frying pan over a medium heat. Cook large spoonfuls of the batter for 3-4 minutes on each side until risen slightly and golden in colour.

Pile the pancakes onto a plate, top with a dollop of yoghurt and scatter over the raspberries and passionfruit.

Tips

  • You can use the same amount of low-fat or fat-free yoghurt if preferred.
