Raspberry and Peanut Butter Smoothie Bowl

Heat the oil in a large frying pan over a medium high heat and fry the onion, pepper and beef mince for a few minutes before adding in the cauliflower florets and cooking for a few minutes more.
Add in the chopped tomatoes, chipotle paste and dried oregano and stir everything together.
Simmer over a low heat for 10 minutes then scatter over the cheese and jalapenos before serving.
If you like, you can place the dish under the grill for a few minutes before serving to make the cheese lovely and golden.
This will keep well in the fridge for up to 3 days to get ahead on some meal prep!
