Ingredients
Serves 1
- 15g yoghurt, such as Greek, natural or soya
- 15g mayonnaise
- ¼ tsp mild curry powder
- 10g mango chutney
- 1 lemon, juice
- Salt and pepper
- 15g flaked almonds, toasted
- 120g cooked skinless chicken breast, sliced
- 20g sultanas
- ½ baby gem lettuce, leaves torn
- 1 handful rocket
Method
In a bowl, mix together the yoghurt, mayonnaise, curry powder, chutney and lemon juice with a little salt and pepper.
Stir through the almonds, chicken and sultanas then serve on top of the lettuce and rocket.
Tip
- This salad is great for on the go. Keep the chicken mix and salad separate in your lunch box until you're ready to tuck in.
