Banging Banoffee Pancakes

Ingredients

Serves 1

  • 60g self-raising flour
  • ½ tsp baking powder
  • ½ tsp cocoa powder
  • 1 medium egg
  • 1 egg white
  • 100g yoghurt
  • ½ tsp coconut oil
  • 1 small banana, peeled and sliced (75g)

Method

Combine the flour, baking powder and half of the cocoa powder in a bowl and make a well in the centre. Add the egg, egg white and 70g of the yoghurt and whisk to create a smooth batter. (Add a bit more flour if the batter feels too runny.)

Melt the oil in a non-stick frying pan then fry large spoonfuls of the batter for a minute on each side until puffed up and golden.

Layer the pancakes with the remaining yoghurt and the sliced banana then dust with the remaining cocoa powder.
