Moussaka me! This recipe takes a bit longer but you get a few portions and it tastes amazing.
Pour the maple syrup into a saucepan, add the coconut oil and salt and bring to the boil. Reduce the heat slightly and simmer for 3 minutes. Stir in the oats, raisins and pumpkin seeds.
Tip the mixture into a 20cm square cake tin lined with greaseproof paper, press down with the back of a spoon then chill in the fridge for 2 hours until firm. Cut into 10 or 12 equal-sized bars.
