Apple and Berry Breakfast Crumble

Ingredients

Serves 3-4

  • 2 medium apples, thinly sliced
  • 300g mixed frozen berries, defrosted
  • ½ lemon, juice
  • 70g butter, melted
  • 150g ground almonds
  • 70g protein powder, vanilla or unflavoured
  • Pinch cinnamon
  • 30g flaked almonds

To serve with each portion

  • 90g yoghurt, such as greek, natural, soya

Method

Preheat the oven to 180ºC. Place the apple and berries into a baking dish and squeeze over the lemon juice. In a sperate bowl, mix together the butter, ground almonds, protein powder and cinnamon; it’s easiest to do this with your hands, as long as the spread has cooled a little. You want the mixture to look like clumpy wet sand.

Sprinkle the crumble mixture over the apples and berries and top with the flaked almonds. Bake in the oven for 25-30 minutes until the top is golden and the fruit has softened. Serve each portion of crumble with the yoghurt.

  • Good for batch cooking

Tip

  • If the crumble mixture is browning too quickly, place a piece of foil over the top and continue baking.
