Croque Monsieur

Ingredients

Serves 1

  • 2 tsp Dijon mustard
  • 2 slices wholemeal bread
  • 50g thick-cut ham
  • 35g cheddar cheese, grated
  • 1 tsp butter, softened
  • 60g fat-free yoghurt, greek or natural
  • Salt and pepper
  • Simple green salad to serve

Method

Preheat the grill to high. Spread the mustard over the two slices of bread then make a sandwich with the ham and half of the cheese. Spread the butter over the outside of the sandwich then lay in a dry, non-stick frying pan and cook for 2-3 minutes on each side until toasted and golden brown.

Slide the sandwich onto a baking tray, spread the yoghurt over the top then sprinkle over the remaining cheese. Season with salt and pepper then slide under a hot grill for a couple of minutes until the cheese has melted and starts to turn golden. Serve with a simple green salad.
